Healthy, fully-ripened grapes, gentle production methods, and above all time: these are the most important conditions for the production of fine wines. The underlying goal and guideline of the work in the cellars at Tòr Löwengang is to preserve the quality the grapes have achieved at the time of harvest. So, the construction of the new building was also accompanied by the development of an innovative system of vinification: functional, efficient and gentle.

Alois Lageder and his brother-in-law, the oenologist Luis von Dellemann, approach their work with experience, a sensitive feeling for wine and a deeply rooted sense of tradition. All of which, however, finds its counterpoint in their technical understanding and their openness to innovations. Modern cellar technology allows the grapes and wines to be handled much more gently. The result is wholesome, harmonious and authentic wines. Wines that give expression to the character of their place of origin, and the grapes from which they are made. Alois Lageder’s wines are natural wines, in observance of all the criteria of organic wine making. Alois Lageder’s design of the cellars allows the process of vinification to exploit the force of gravity.
